Features

Deep ruby red color, ripe and dense. On the nose it explodes into fruity aromas, of ripe black fruit with ethereal nuances and vegetable smells, softened by toasted, mineral, spice, vanilla and butter notes. Even to the taste it reveals itself as a wine of great power, in harmony with what is perceived on the nose. The high alcohol content enhances the tannic fullness and at the same time makes it very balanced and harmonious. The finish is decidedly long and pleasant.

Vinification

The partially dried and cold bunches are de-stemmed and placed to ferment in cells with temperature control at 10 ° C. After about 10 days of fermentation, punching down and pumping over begin, which last for 30 days. Subsequently, the pomace is separated from the new wine, which continues its slow fermentation in small French oak barrels. Aging takes place for about 20 months in barriques, followed by six months in the bottle.

Pairings

Excellent meditation wine, its qualities are appreciated with dishes based on red meats and game.
