The scent is powerful, with notes of ripe peach, pineapple, resinous notes and medicinal herbs, then vanilla, oak wood and honey, finally candied fruit, especially cedar and orange. The sensation perceived on the palate is beautiful in harmony with the olfactory analysis, immediately powerful, savory, fresh and salty, sweet notes of ripe fruit, but also almond and tea, then vanilla and white chocolate. The aftertaste is decisive, alcoholic with a fresh acidic memory.
The well-ripened and healthy clusters are unloaded directly into a soft air lung press and the must obtained from the pressing is fermented without decanting in small French oak and Hungarian acacia barrels. The batonnage is carried out weekly until the end of December and the aging in wood continues until bottling. A long aging in the bottle follows.
