When young, the “Kofl” is often still firm and closed, yet clearly showing dynamism, strength and mineral character. The aging in wooden barrels and the mixing of fine yeasts give this elegant Sauvignon further complexity and length. The fruity nuances are reminiscent of the wild scents of gooseberry, sage, elderberry and black currant that the descending mountain winds, passing through the overhanging woods, bring with them.


Cold maceration for 3 hours; fermentation at controlled temperature in steel tanks - aging on fine yeasts in large wooden barrels

The exclusive role of manual labor in this winery is demonstrated by the very small structure: 190 members cultivate 190 hectares of land, carefully following a strict quality program. These soils are located - a singular fact for South Tyrol - between 220 and 900 meters above sea level in the same municipality. The prerequisite for this is a careful and precise refinement of the individual wine areas. Knowledge and experience deriving from centuries of viticulture in the municipality of Cortaccia, combined with modern technologies, are just as important as the commitment and passion of the winemaker and his collaborators in the cellar.
