Since 1995, only the best and oldest vines have been selected for Pinot Noir Sanct Valentin. Minimum yields and careful care guarantee a fine and extremely sensual red wine. It is the most important red wine of the cellar and stands out in the glass for its finesse, fruit, well-balanced structure and fine tannins. Vinification


Cold maceration for 3 days and fermentation in steel. Carrying out the malolactic fermentation and aging in barrique-tonneau. After about 1 year, blending and further aging for 6 months in large wooden barrels.

Stewed shoulder or back of lamb, oxtail or more intense cheeses.

Cantina San Michele Appiano was founded in 1907 and today brings together about 340 families of winemakers who make up its backbone. Viticulture is a great passion for them handed down for generations. Each contributes with knowledge, passion and dedication to ensure that the winery has excellent grapes to be transformed and refined with care and sensitivity. The lands surrounding the town of Appiano on the outskirts of Bolzano, where wine has been at home for over 2000 years, have ideal characteristics for the production of great grapes which are then carefully transformed by the cellar. The transformation of the grapes takes place in the cellar. This is a process of ennobling which, respecting tradition, is combined here with innovative winemaking techniques. Excellent and fully ripe grapes are the indispensable prerequisite for the production of fine wines. They are vinified strictly separated by single cru, that is vineyard, and by quality level. It is in fact only through individual vinification that it is possible to enhance each single terroir. The wine is then aged in steel or in wooden barrels until it reaches its full maturity. Since 1977 Hans Terzer is the winemaker of the winery. He is one of the most important oenologists in Italy. In 1997 he was awarded by Gambero Rosso as one of the ten best winemakers in the world and for over 20 years he has been president of the South Tyrolean “Kellermeister” association. Together with the management he has managed over the years to convince the partners to adopt a rigorous philosophy based on quality. This path has not always been easy, but with a lot of creativity, a good instinct and a lot of pride he finally managed to make San Michele what it is today: one of the best wineries in Italy.
