The grapes are delicately de-stemmed and fermented in open vats. To avoid the excessive extraction of tannins, during the vinification there are not too many pumping over and punching down. When fermentation is complete, the wine is decanted into tonneau (larger oak barrels) where the malolactic fermentation takes place and maturation for 10-12 months. Finally, a few months of bottle aging follows.
