Fermented in open vats. To favor an optimal extraction of color and tannins, the pomace cap is reassembled and fulled up to four times a day for the entire duration of fermentation. Subsequently, the wine is decanted into barrique where the malolactic fermentation takes place and where it remains in small oak containers for a period of about 18 months.
