Features

Medium intensity golden yellow color. Ripe apple, quince, honey and cumin on the nose. Strong and generous on the palate with consistent fruit and intense aromas reminiscent of anise and pepper.

Vinification

Fermentation and maturation in stainless steel for 2/3 of the must, 1/3 in oak barrels of 30 hl. Maturation for 12 months and then 6 months in the bottle.

The Abbey of Novacella is located in the heart of the Isarco Valley, a reality that counts on about twenty hectares of vineyards. The vineyards around Novacella are mainly exposed to the south and southwest, and in order to obtain good results, a precise harmonization between the variety of vines and the micro exposures is necessary.
