Features


Straw yellow and bright with lime peel reflections. Dense and deep: first of all: it offers scents of haymaking, yellow peach and persimmon. In the second nose it describes all its great fragrance with resin hints, mint and cedar vat, strawberry tree honey, alpine touch. Enveloping and deep with great balance and density component of the fruit and freshness on the finish of long sapidity.

Vinification


Alcoholic and malolactic fermentation, aging in barrique / tonneaux. Blending after almost a year and further aging on the lees for three years in stainless steel vats.

Pairings


Strong fish dishes based on turbot or monkfish, a tasty risotto with seafood, but also dishes featuring wild birds or delicate veal-based dishes.

Cantina San Michele Appiano represents an exemplary symbiosis between tradition, manual labor and innovative wine technology.This is due to the foundations laid already a century ago, when in June 1907, forty courageous farmers from Appiano founded the social cellar with an innovative mentality. Hans Terzer has been the winery's winemaker since 1977. He is one of the most important oenologists in Italy. In 1997 he was awarded by Gambero Rosso as one of the ten best winemakers in the world and for over 20 years he has been president of the South Tyrolean “Kellermeister” association. Together with the management he has managed over the years to convince the partners to adopt a rigorous philosophy based on quality. This path has not always been easy, but with a lot of creativity, a good instinct and a lot of pride he finally managed to make San Michele what it is today: one of the best wineries in Italy. Excellent and fully ripe grapes are the indispensable prerequisite for the production of fine wines. They are vinified strictly separated by single cru, that is vineyard, and by quality level. It is in fact only through individual vinification that it is possible to enhance each single terroir. The wine is then aged in steel or in wooden barrels until it reaches its full maturity.
