Bright bright straw yellow color, subtle and continuous perlage, subtle, fresh, floral nose, with notes of quite ripe exotic fruit, orange blossom, flint to determine an essential, clean, precise bouquet, with noticeable unroasted hazelnut and peach white. Mouth very dry, subtle, rigorous and great minerality, almond, fresh, good balance, it can be drunk very well. |
The grapes are subjected to soft pressing in the absence of oxygen obtaining a yield of 55%. The must thus obtained ferments in stainless steel tanks and used barriques. The fermentation is followed by the malolactic fermentation and an aging on the yeast for 8 months. At the end of this period, the wine of the year, together with the wine of previous vintages, forms the cuvee destined for the draft. The refermentation takes place in the bottle after adding 24 g / l of sugar which develop an over-pressure of 6 atm. After 40 months of aging in contact with the yeasts, the bottles are moved to the pupitres where the remuage takes place. With this last operation, the crown cap is also replaced by the mushroom cap |

CESCONI is a family business, with a great winemaking tradition matured on the hills of Pressano in Trentino and which has its roots in history. Over the years, CESCONI has moved with commitment to the organic conversion of all the vineyards, and more recently to the approach to biodynamics, in a path of continuous growth based on deep knowledge of the territory and on daily attention to the vineyards. Currently the vineyards extend over an area of about 20 hectares, divided between the Pressano area and the Sarca valley, and characterized by profound differences in climate and soil. Over the years Paolo CESCONI with the support of his sons Alessandro, Franco, Roberto and Lorenzo, begins the modern history of the company. Viticulture is transformed, replacing the pergola with training systems with higher planting density and production for reduced strain; the grapes are vinified using innovative techniques, which allow to preserve the aromatic integrity and guarantee the shelf life of the wines. Tradition and innovation are accompanied, in a constant search for quality, with the desire to produce wines that are an authentic expression of the territory. |
