Features


Fresh and elegant wine, with a unique personality. Spicy and elegant nose with hints of small fruits and hazelnuts, on the palate it shows a characteristic acid vein supported by a characteristic minerality.

Vinification


The grapes are crushed and destemmed and placed with the skins in the fermentation tanks. Once the fermentation has begun, it still remains to ferment with the skins for 3/4 days until the so-called "raising of the hat". Then it is drawn off (separated from the skins) and the fermentation ends in steel tanks and barriques that are not new (for about 10%). Spontaneous fermentation with indigenous yeasts, no use of fermentation aid. No SO2 is used on grapes or in must. Fermentation and aging take place in steel. Malolactic fermentation: it is not controlled, it is normally carried out completely. Pre-bottling refinement: permanence in wood in the presence of the noble lees, until spring.

Since 2007 CASTEL NOARNA is inspired by the philosophy of natural agriculture for the cultivation of vineyards. The use of artificial fertilizers, herbicides, synthetic products and insecticides has been banned. All work in the vineyard is done with the utmost respect for the plant.
