Features

Wine characterized by fine hints of wildflowers and alpine hay, good fresh minerality on the palate and a distinctly saline brand.

Vinification

One day of maceration, then gently pressed grapes. Spontaneous fermentation with indigenous yeasts of the vineyard for several weeks. 3.5 months aging on the lees in steel, 4 months in neutral wood on the fine lees and a further 4 months in steel, unfiltered.

Pairings

It goes well with fish dishes.

Producer

The Thomas NIEDERMAYR estate has been producing certified organic wines for over 20 years. The vision of organic viticulture in fact started in the early 90s with his father Rudolf, now strengthened by Thomas with an increasingly eco-sustainable management, keeping the entire production process uncontaminated, giving life to high quality wines. We are in the field of Piwi grapes, or vines resistant to fungal attacks: Solaris, Bronner, Souvignier Gris, Cabernet Cortis. The vines on the hill above the village of San Michele Appiano at an altitude of about 500 meters above sea level, are influenced by the particular microclimate of the ice holes typical of the area and by the imposing Gandberg rocky massif that rises behind the estate, giving life to wines of impressive freshness and vitality.
