For more than 20 years Sauvignon Sanct Valentin has benefited from the exceptional conditions offered by the individual and carefully selected parcels at the foot of the Mendola, to generate a great superior class wine with seductive fruit, excellent minerality and persistence. This nectar is today not only the pride of the house and the most important wine of the Sanct Valentin line, but also one of the most awarded white wines in Italy. With a yellowish green color, a dense bouquet of yellow fruit, gooseberries, elderflowers and ripe currants on the nose, crisp acidity, soft body and elegant fullness.

Vinification


The largest share, about 90%, is fermented in steel vats, in which the wine lies on fine lees until the end of April. The remaining part is vinified and aged in wood.

Pairings


Delicious companion of exclusive parties. It goes wonderfully with grilled fish, such as perch and sole or with char, or even with a tasty risotto with vegetables.

Producer


Cantina San Michele Appiano was founded in 1907 and today brings together about 340 families of winemakers who make up its backbone. Viticulture is a great passion for them handed down for generations. Each contributes with knowledge, passion and dedication to ensure that the winery has excellent grapes to be transformed and refined with care and sensitivity. The lands surrounding the town of Appiano on the outskirts of Bolzano, where wine has been at home for over 2000 years, have ideal characteristics for the production of great grapes which are then carefully transformed by the cellar. The transformation of the grapes takes place in the cellar. This is a process of ennobling which, respecting tradition, is combined here with innovative winemaking techniques. Excellent and fully ripe grapes are the indispensable prerequisite for the production of fine wines. They are vinified strictly separated by single cru, that is vineyard, and by quality level. It is in fact only through individual vinification that it is possible to enhance each single terroir. The wine is then aged in steel or in wooden barrels until it reaches its full maturity. Since 1977 Hans Terzer is the winemaker of the winery. He is one of the most important oenologists in Italy. In 1997 he was awarded by Gambero Rosso as one of the ten best winemakers in the world and for over 20 years he has been president of the South Tyrolean “Kellermeister” association. Together with the management he has managed over the years to convince the partners to adopt a rigorous philosophy based on quality. This path has not always been easy, but with a lot of creativity, a good instinct and a lot of pride he finally managed to make San Michele what it is today: one of the best wineries in Italy.
