Features


Very intense purple color, great varietal aroma: small fruits, especially morello cherry, blackberry, currant which integrates with spicy notes: vanilla, coffee and cocoa. Warm, sweet, very structured and very harmonious flavor. It comes from partially fermented must of Lagrein grapes, with the addition of brandy in turn obtained from two local Trentino grape varieties: the schiava and the lagarino.

Vinification


The Lagrein grapes are harvested when very ripe, then placed for 1 - 2 nights in the cold room to lower the temperature.After destemming, the grapes, not crushed, are passed by gravity into the tank, where they stop for a cold maceration for 5 / 6 days to increase the aromatic extraction, after which the fermentation starts which is interrupted at 4 - 5 ° degrees of alcohol carried out with the addition of a brandy aged more than 10 years. It is important in this phase to mix the distillate so that there is no burning. The temperature of the distillate is brought to –10 - 15 degrees below zero and the addition is made during pumping over. . After a few days the product is put into kegs where the brandy used to be. After 8/10 months, once clarified, it is bottled.

The Pojer e Sandri company was born in 1975 from the meeting of Fiorentino Sandri and Mario Pojer. The first had just inherited about two hectares of vineyards, the second had recently graduated from the prestigious enology school of San Michele all'Adige. The protagonists are a tireless duo constantly looking for techniques and solutions to keep their wines always at the top. Today the Faedo company in Trentino boasts 32 hectares of property divided into small plots where respect for the environment and the surrounding nature is the main feature of Pojer and Sandri's philosophy. Only the most suitable varieties for the area are planted. We could easily identify it as a workshop in constant search for its prestigious wines.
