Soft pressing of the grapes, with following static decantation of the must. Fermentation at a controlled temperature of approx. 20 ° C. At the end of fermentation, the must remains in contact with the yeasts for a long time. A part of the must (approx. 15%) is fermented and aged in French oak barrels for 5 months. After decanting at the end of fermentation, the wine remains on the lees for a long time. Assembly takes place in spring.
To be combined with appetizers, smoked salmon and other fish preparations, pasta dishes, especially with creams and cheeses, fried fish fillets (perch, whitefish, sole), breaded.
