Features


Straw yellow color with golden reflections, mottled by a very fine and persistent perlage. The aromas unfold a broad and layered bouquet that ranges from the voluptuous notes of candied citrus and ripe fruit to the more intriguing ones of dried fruit and spices. On the palate it is enveloping and vibrant at the same time, with incisive acidity and an underground sapid vein, with carbonic dictating the rhythm to the aromatic dance fluctuating between the fragrance of fruit and the sensuality of pastry

Vinification


Delicate pressing to obtain the free-run must follows a targeted and careful vinification. A portion of the Chardonnay (about 20%) ferments and refines in barrique, while the remaining Chardonnay and Pinot Noir ferment, separately by variety, in steel at a controlled temperature of 14-16 ° C, followed by aging on the lees until spring forwarded. The various wines are then combined (Chardonnay from wood, Chardonnay and Pinot Noir from steel) with the addition of the liqueur de tirage, bottling and arrangement in the cellar at 10-12 ° C for the second fermentation and resting on the lees for an average of at least 60 months. After the degorgement phase, the bottles rest for another three months before being released on the market.

Pairings


It is particularly exalted on recipes with strong flavors, such as those based on fish with consistent meat (tuna, swordfish) and / or with particular cooking (roasted, grilled, marinated) and / or seasoned with spices and aromatic herbs.

Producer


Historic South Tyrolean winery located in the area of Lake Caldaro. It was born in 1919 by the hand of Giuseppe KETTMEIR oenologist and expert connoisseur of South Tyrolean viticulture. In 1964 KETTMEIR recognized the potential of bubbles and began the production of sparkling wines with the Charmat method, contributing to the revival of local sparkling wines. In 1992 the new challenge with the passage to the production of classic method sparkling wines: the most elegant and distinctive of the production of KETTMEIR . The production is completed by the typical wines of the area: Muller, Pinot Bianco, Chardonnay, Pinot Nero and Moscato Rosa.
